Cooked some bacon and used it as my oil of choice. Crispy fantastic results.

The best way to get crispy edge pancakes is Crisco! Better than oil or butter. I know it's horrible for you but this is how I grew up on the crispy side of life.. & let me just tell you, it's out of this world. It's also great if you want to forgo any coconut flavor. Give it a shot! (Yours look pretty damn great though.. crisco will just give you that butter flavor people crave but at that higher smoke point you can't do with butter. It's perfect.)

In retrospect, the melted butter in the recipe may be there to lend the butter flavor to the pancakes fyi

You are absolutely right. I grew up in the 80's when everything was cooked with Crisco. SO bad for you... But SO good. In fact- I spent years trying to figure out this perfect chocolate chip cookie recipe I had when I was a kid? I tried an oil first, then butter... Nothing was coming close. Switched to Crisco? Soft with crispy edges. Perfect.

You are so right. I love Hash House a Go Go Vegas. But I must shout out cracker barrel where I fell in love with the crispy edge pancake. At home I only use the Krusteav mix it works great.

You really need to learn more about butter. Overall, in moderation? It is healthier to use (and tastes better too) than many oils and most definitely is better for you than margarine! You'd also be surprised to find out how many vitamins are in butter compared to some common oils. Stop being afraid of butter. Many of us were taught wrong. It's time to correct that!

We're not afraid of butter. It just doesn't make the crispy crunchy edge we crave. I always add butter after cooking.
