I, too, would rather use raw supermarket salmon vs expen$$ive sushi grade but am scared of being poisoned. Do you think of I cooked the raw supermarket salmon a little first then finished it off in the broiler it would be ok or would the top be overcooked? Or should I say fuck it and use canned salmon?
Ben are the folks @ Bon Appétit reading your brilliant blurbs here?? Even more entertaining than your bravo recaps! As a recovering vegetarian I too get spooked about raw salmon- however do you think this recipe might work with sushi grade tuna? It’s got all the feels of a spicy tuna casser-roll.
When I got off the plane in Maui back in 2014 the first place I went was Tin Roof. Sheldon was there & just happened to be doing a live interview for a TV special or newscast. Everything was incredible. Even the Mac salad! I would never order that anywhere else. The poke bowls were the best I've had. I can't wait to try this recipe! Thank you for sharing your incredible, hilarious, almost disastrous cooking journey with us! You made it work with all the swaps! You did it!

I think yes to all of the above. I used canned salmon and it was totally fine. But I also think a pre-cook of the supermarket salmon might be fine!
Is there another fish that could substitute if one doesn’t like Salmon?
I imagine any fish you’d want to get at sushi would work - tuna perhaps?
